Holy crap, you read my mind! I was just about to make this thread!
The games I play are Guilty Gear (getting Slash in a few days), Naruto: Gekitou Ninja Taisen! 4 (imported, the version we have, Clash of Ninja, is extremely outdated), and Melty Blood. I prefer Naruto over both of the others, with Guilty Gear preferred over Melty Blood (but that might be that I just started Melty Blood and haven't played against anyone besides my brother, and that was before we even had movelists).
As far as Survival Arts goes, though, I've never played it, I'll have to soon now.
The games I play are Guilty Gear (getting Slash in a few days), Naruto: Gekitou Ninja Taisen! 4 (imported, the version we have, Clash of Ninja, is extremely outdated), and Melty Blood. I haven't played much of Guilty Gear and I've never heard of Survial Arts, but my favorites are: Super Street Fighter 2 Turbo, Vampire Savior, Marvel Vs. Capcom 1 & 2, Street Fighter 3, Garou Mark of the Wolves, and the various King of Fighters games. I'm not a fan of 3D but Soul Calibur is alright.

Guilty Gear Slash is english almost entirely (except Story, but I've already gone through that on GGXX USA so I don't mind).
Naruto: Gekitou Ninja Taisen! is ALL japanese, but it's easy beyond belief to tell what stuff is based on pictures. Not to mention, I know what button means multiplayer, I know what button means 1 on 1, I know what button means 4-player mode, and that's all I need.
Nartuimate Hero is entirely japanese as well, but again, the pictures help. For example: isn't it obvious that versus is the two kunai clashing? And options is the PS2 buttons?
It's much less that I know japanese, or that they're english, than I know what I'm doing by trial and error.
